Good From The Coop: Duck Eggs

Yeah, yeah, I know, I don’t have ducks. Rub it in. But Jon Stiebrs has ducks – lots of them – and was kind enough to talk to me about how he raises ducks for small-scale, commercial duck egg production. I wrote about my love for the duck egg, and about how Jon raises his quackers, in the July issue of PCC Sound Consumer.   1. What is the difference between duck eggs and chicken eggs? Taste? Size? ??

  2. I enjoy my ducks and really appreciate the eggs they give us. The ducks are quite "quacky", and can be heard commenting on everything that happens around the farm.
    Since ducks don't roost off the ground at night the way chickens do, we have to put them inside their little house every evening. Usually they go in without much fuss, but if any little thing is different about the "bed-time" routine, they get suspicious and confused and have to be patiently convinced to go in.
    One of my favorite ways to eat our ducks' eggs is to top a piece of toast with a fried egg, a pile of braised garden kale, and a drizzle of balsamic vinegar. I also love a "farm" version of the Korean dish Bi Bim Bop. A bowl of rice topped with veggies, a fried egg, and Gogujang (Korean spicy bean paste) & a side of kim chi. Yum! Then there were those incredible beet latkes we had the other night……

  3. Well, I have eaten a total of 2 duck eggs in my life – all since our first pair started laying this weekend. The eggs are larger and much more rich than chicken eggs. So far we've fried them up with salt and pepper, but them on (homemade) multigrain toast and pricked the rich delicious yolk so it covers the bread in gooey goodness. I have never had chickens, so I can't speak to the difference between the two birds, but we've loved our ducks! Personally, I love that they have rounded bills and not scary beaks. They are SO much fun to watch waddle around the yard, and have become great guard ducks! They are a bit noisy, but we have not had one complaint – everyone comes to watch our city ducks play in their kiddie-pool pond and generally entertain with their ducky antics and especially get a kick out of watching the interactions between ducks and dog.

  4. Just found your blog and I am loving it! I have Muscovy ducks, and they are great! No quacking, easy to care for and they can be used for eggs and meat. They are also great at reducing slugs around the garden, as long as you can keep them out of the actual garden beds!

    I have chickens, not ducks, but I am in LOVE with the runner ducks at KIS Farm in Redmond, WA. They seem pretty quiet and are soo cute when they walk around in formation. Apparently they’re easy to herd into their cage at night and are easier on the pond than muscoveys (sp?). Maybe one day I’ll sneak a few chicks past the husband to add to my backyard farm. :)
