Coconut Curry Simmer Sauce
- 1 cup peach salsa
- ¾ cups coconut milk
- 1 tsp - 1 tbsp yellow curry paste (to taste)
- juice and zest of one lime
- Salt to taste
- Whisk together all ingredients in a small bowl.
- Adjust seasonings as desired.
